Chocolate Hot Cross Bun Pudding


Inspired by a recipe I found off ninemsn by Ex-Masterchef contestant Alana Lowes, and our seemingly never ending supply of hot cross buns at home (even though Easter has come and gone), I decided to make this incredibly rich and sinful dessert. This Chocolate Hot Cross Bun pudding is the epitome of chocolate heaven and I had trouble stopping at one serving even though it was so rich and sweet. I used my bread and butter pudding recipe and tweaked it a bit to create this hot cross bun version. I would have provided a photo of what a serving looks like but I didn't want to tempt you too much ;)


Chocolate Hot Cross Bun Pudding

Ingredients
300ml thickened cream
3 egg yolks
1/3 cup brown sugar
200g dark chocolate, broken into squares
10 chocolate chip hot cross buns, torn up into big chunks 
200g white chocolate, broken into squares (or use white choc chips)

Method
1. Preheat oven to 180C. Put cream and dark chocolate in heavy based saucepan, bring to simmer for 2-3 minutes (until chocolate has dissolved). Place egg yolks and sugar in a bowl and whisk until thick and creamy. Gradually whisk in the hot cream.

2. Place a thick layer of torn up hot cross buns on the bottom of a 6-cup capacity ovenproof dish (Just chuck it in haphazardly, don't worry about being neat). Scatter about 100g of white chocolate squares over the brioche. Pour 1/2 the custard mixture over the layer. Repeat with more hot cross buns, white chocolate and custard. Finish with a layer of WHOLE hot cross buns (I finished up with 5) and white chocolate (no custard).

3. Bake for 30-35 minutes. Remove form oven and stand for 10 minutes. Dust with cocoa powder and serve with vanilla ice cream or softly whipped cream (I think it tastes better by itself, all warm fresh out of the oven)
