Garlicky Breadcrumbs

Originally I thought of making this to stir through pasta just to add a bit of texture and extra dimension. Plus I thought it would be great for those times I don't feel like a heavy meaty pasta meal. But once I got a taste of this stuff, I sorta started using it on everything.....vegetables (most notably steamed broccoli), roast chicken (BEST combination!), corn, polenta....on its own....

Haha I think its because it has that intense garlic flavour, its (lightly) fried and crunchy - perfect attributes for addictive noms. This stuff is also really easy to make - simply mix together the breadcrumbs with some spices/herbs, fry the garlic up a bit, add the breadcrumbs and toast til browned (but not too brown =P). Its another one of those recipes which is really versatile and easily changeable.

TADA! Perfect texture/flavour enhancer!

Garlicky Breadcrumbs

1 cup breadcrumbs
4 (or more) garlic cloves, crushed
1 tbsp Italian herbs
1/2 tbsp oil

1. Toss bread crumbs with Italian herbs. Set aside.

2. Heat oil in a large frying pan over medium high heat. Add garlic and fry until fragrant and slightly browned.

3. Add breadcrumb mixture to the pan, keep stirring to toast until breadcrumbs turn brown slightly (3-5 minutes).

4. Drain breadcrumbs of excess oil on paper kitchen towel. Serve warm over pasta....or anything really! You may feel the need to season with salt (you can do this at the beginning when you're tossing with the italian herbs, I'd say do it to your own taste)
